    一償宿願~滿足

    今天也不知道怎麼了~五點半就給他起床
    原因是~突然好想吃炒麵喔~~~~
    因為在的上海的兩各月雖然沒有天天吃早餐~
    但是每次吃的時候就會很懷念台灣的道地小吃~炒麵配粉腸湯(豬血/隔間肉/油豆腐湯)
    所以洗各澡就給他出門去找~但是一定要用心找....
    不要懷疑~因為並不是每一間的都會好吃~首先一定要人多(台灣人的嘴是很挑的)~
    也不可以是太新的店(這跟魯肉汁有關)~重點是一定阿婆煮的才好吃!!真的
    騎者機車逛了兩各市場~發現好像都沒有我想要的店~原本想騎到小時後的老家那邊去看看~
    突然讓我發現一間客滿的小店~我當然停了下來觀望一下~嘿嘿
    招牌上寫者~炒麵/炒米粉/滷肉飯~再看看他的湯~粉腸湯/豬血湯/隔間肉湯/油豆腐湯/粽合湯~~
    我就知道這間一定沒錯了~
    想知道為何沒錯嗎?~
    首先呢好吃的炒麵必須是使用油麵~也就是黃麵~
    再來~麵應先以大量滾水煮熟~較多的水量比較不會因放麵後溫度下降太多~而高溫的水才容易煮出好吃的麵~
    乾麵條應以扇形放麵入水~為的是讓麵受熱均勻~也避免黏成一團~
    入鍋後應先等約一分鐘~讓麵稍軟後才才進行翻攪動的動作~煮到麵粉心熟透即可~
    要炒的麵應稍硬~不然炒後會嫌麵太爛..所以一定只有老經驗的阿婆才做得到~哈哈
    多油少水炒出的麵較乾Q~加上少許的豆芽菜韭菜最多加一點紅蘿蔔高麗菜~
    最後淋上熱熱肉燥~一碗香噴噴的肉燥炒麵就出爐啦!
    為何我要打粉腸湯呢~因為只有台灣才會吃的到有鹹菜的粉腸湯~
    重點是~真正好吃的粉腸一定要嚼勁十足~真的只有台灣才做得到~
    這樣的湯頭除了需要大骨下去熬以外~還需要加入海蛤蜊/酒/糖/薑煮成湯汁及少許薑絲蔥花提味~哇~更香!!
    當然絕對不可以少的獨家配料~中部地區才會有的東泉辣椒醬(上海的台灣食品店也有啦)~哇!真的是美味阿~~
    哈哈哈~真是得償所望得得得償所望阿~~這樣簡單的料理就滿足了多少家庭~
    幫多少勞工朋友把一整天的氣力都傳便便啦~哈哈哈
    還有很多道地的小吃~一定在繼續完成它~下一站(台中火車站的嘉義米糕)
